Homemade Tortilla Chips!

I always love the free Tortilla Chips and Salsa when Papie and I go to the Mexican Restaurant!  But since having Baby C we haven't been out to eat much.  So this fun and easy recipe is a home run in my eyes!  Its so simple that you can have it anytime of day.  Its also a crowd pleaser.  In fact, I'm making them for the family Christmas party this week.

Ingredients:
Corn Tortilla  cut in to triangles
Vegetable oil
Season Salt

Depending on how many chips you want to make choose an appropriate size pan (the more chips the larger the pan should be). Fill the bottom of the pan with oil about half inch so the tortillas will be submerged in the oil.  Set the stove to med high heat.  Add the Tortilla triangles when the oil is hot.




Occasionally turn the tortillas. Let fry until evenly golden brown on both sides.



Place cooked chips on a paper towel to absorb the extra grease.   While Chips are still hot add a sprinkle of season salt.




Chips will stay fresh and crunchy for a few days so you can store them in a zip lock bag after they have completely cooled off.  




Enjoy  with Salsa or Guacamole

Banana Bread Remix!

My life has been changed by that easy cake mix banana bread (see recipe here).  I wanted to do a remix of it and use Red Velvet cake mix.  It was equally as good as the Yellow cake mix however Papie preferred the yellow cake mix banana bread over the Red Velvet.  You all can be the judge and let me know what you think after you try the recipes out.



Ingredients:

1 Box Red Velvet Cake Mix
3 Eggs
1/3 Cup oil
4 Mashed Bananas
2 Cups Milk Chocolate chips

Preheat Oven to 350 Degrees F

Mashed bananas and add remaining ingredients in to bowl and mix together.  Pour batter into two well greased loaf pans.  Bake for 30-35 minutes at 350 Degrees F


*Helpful Tip:  When your bananas are starting to get over ripe just pop them in the freezer with there peel on and take them out whenever you want to make banana bread.  Just let them thaw out for about 15-20 min  and there ready to go after you peel them.  They are a little watery but that's okay cause you mash them up anyways.

Quiche For Breakfast, Lunch or Dinner at my house!



Oh how I love Quiche anytime of the day.  Its a meal all on its own and its very filling.  Left over eggs never taste good after they are heated up, they are always rubbery and dried out!  However, for some reason quiche leftovers still taste good.  This basic components of this recipe are so easy and are always staple ingredients for me. I can change any of the ingredients out and have a different style Quiche. 

Ingredients:

1 Deep dish frozen pie crust
1 cup milk
1 cup cheddar cheese (Add extra cheese if you want, you can never go wrong with to much cheese)
2 table spoons flour
salt to taste
pepper to taste
1 box frozen chopped spinach thawed and rung out 

*Helpful tip from Rachel Ray: thaw the spinach and place in a dish towel and ring out*

Bake pie crust according to package instructions.
Mix all your ingredients together and pour in cooked pie crust.  Cover corners of crust with foil so they don't get burnt.   Bake for 1 hour at 350 degree's F

If you want to take this up a notch add cooked bacon  or ham!!  I always make a big breakfast on Sunday mornings so usually I cook extra of whatever were having such as bacon, sausage, fried potato's and whatever is left over I throw in a quiche to eat for breakfast for the week.

Cake mix Banana Bread!! So easy!

Well I was looking for a new banana bread recipe online one night because I didn't have flour and wanted to find a recipe that used Bisquick cause that's all I had on hand.  But on  Bettycrocker.com I found a recipe that uses cake mix.  How can you go wrong!

Ingredients:

1 Box Yellow cake mix
3 Eggs
1/3 Cup oil
4 Mashed Bananas
2 Cups Milk Chocolate chips

Preheat Oven to 350 Degrees F

Mashed bananas and add remaining ingredients in to bowl and mix together.  Pour batter into two well greased loaf pans.  Bake for 30-35 minutes at 350 Degrees F






Unfortunately I was unable to take a pictures of the whole loaf because, we started eating it before I was able to get it out of the pan.  It was very delicious and moist!  I could still taste the flavor of the yellow cake mix in fact, it was more cake like than regular banana bread.  But Papie and his coworkers really enjoyed it.  Actually Papie preferred this over my regular banana bread.

The most divine Zucchini

I like zucchini but I never knew I could be in love with it until I made Zucchini Au Gratin.  I love Potato Au Gratin so why not Zucchini? I really wasn't sure what I was doing when I made the Zucchini I am not even sure you can call it Au Gratin but, Papie said it reminded him of potato Au Gratin so I went with it.  Were running out of food in the house and I needed to go to the grocery store ASAP but I had a lot of miscellaneous things in the fridge I wanted to use. So in to the baking dish it all went!

Ingredients

Olive Oil
4-5 Small to Medium Zucchini
1 cup cheddar cheese (I'm sure any cheese would be delicious but cheddar is all I had on hand)
1/4 Parmesan cheese
1/2 cup Italian bread crumbs
1  teaspoon spoon salt
1/2 table spoon garlic powder
fresh cracked ground pepper
1 table spoon dried parsley flakes
1 1/2 table spoons butter.


Grease baking dish with olive oil so cheese doesn't stick.  Cut Zucchini into round slices that aren't to thin so they have a little bit of a bite to them.  Mix all ingredients except bread crumbs and butter in a medium size bowl and then transfer to baking dish. Sprinkle bread crumbs on top of zucchini and slice up butter into cubes and spread over bread crumbs so breadcrumbs will get a nice golden crunch to them.

Bake for 350 degrees for 50 min



I think this will be a great side for Thanksgiving!!  Hope you enjoy it!

Chicken Chili is a great figure friendly fall dinner

I love all things Chili especially in the fall!  I wanted to make a chili that didn't contain red meat so I took my traditional recipe and added shredded chicken instead.  It came out great!  It was so tasty and less greasy than regular chili with ground beef.  Next time I want to try to add more veggies such as carrots and zucchini.  



Ingredients

1 Whole cooked  roasted chicken shredded or 3-4 cooked chicken breast shredded
2 cup frozen corn
1 medium yellow onion
1 green pepper
4 stalks of celery
1 package chili seasoning
2 15 oz cans chili beans
2 15 oz cans chopped tomato's with chills


Dump all ingredients in to crock pot and cook on low for 4-6 hours

Stuffed Green Peppers

Fall is here an nothing screams comfort food more than stuffed green peppers!  I make extra taco meat so I can use the leftovers the next day to turn it into another delicious simple meal.  

3-4 green peppers cut in half
1 cups cooked white rice
1 lbs taco meat (See my recipe here)
1 can black beans or pinto beans
Half a large yellow onion
2 cans tomato sauce
2 cups Shredded cheddar cheese

In a large bowl mix together cooked taco meat, rice, can of beans, one can of tomato sauce and 1 cup shredded cheese.

spoon stuffing in to clean peppers and top with extra tomato sauce and shredded cheese.

Bake at 350F for 30-40 min in a baking dish with about 1-1.5 cups of water at the bottom of your dish to help steam green peppers.

Tutu's are the new children's fashion rage!!

For some reason tutu's are not just for ballet dancers but for little girls to wear as an outfit. I have been seeing a lot of toddlers wearing leggings and tutu's so I thought I would give it a try. I  made a No sew Tutu for my beautiful niece however, she would not allow a photograph of her be posted so here is an example of a light pink newborn tutu I recently made.  Please check out the YouTube on how to make your own No Sew TuTu!

Oatmeal Chocolate Chip Cookies

Heat oven to 350 degree F

1/2 cup butter softened
3/4 cups packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
3 cups oats
1 cup milk chocolate chips ( feel free to use semi sweet if you prefer also, Delicioso)

Beat butter together with brown and white sugar in a large size bowl on medium speed.  Then, add eggs and vanilla and mix well.   In a sepearte bowl  combine flour and baking soda and then add to wet ingredients.  Finally, add oats and chocolate chips.


Papie has been calling these cookies his breakfast cookies because they contain Oatmeal.  They are by know means healthy but they certainly taste good at anytime of day. Hope you enjoy them as much as we do.

Easy Mexican Taco Meat!

It is nearly 80 degrees here in MI.  Its the first nice day all spring.  Since our grill is still  tucked away in the garage I decided that a lovely Taco Salad would be a great lunch for Papie and I. This Taco meat is similar to the original Tex Mex Taco Meat my mother in law makes  however, I cheat by using package taco meat seasoning instead of buying all the individual spices.



Heat skillet with oil and add one small yellow onion




When onion starts to get translucent add 1 lbs of ground beef.  I prefer ground round or sirloin because its leaner than ground beef or chuck.






When meat is browned add one roma tomato.  I used cherry tomatos this time because thats all I had on hand but any small to med size tomato will work.


When tomatos start to get tender add about 4 table spoons of taco seasoning.  Add less or more depending on your taste buds.


Let saute for 10 min so flavors will intensify into meat.



Use this meat for Nachos, Taco's or in a Taco Salad!

28 weeks and counting!!!


Papie took this pictures of me over the weekend at my moms house.  Papie and I don't see each other that much during the week since we work different shifts.  He is so funny when I see him on the weekends because he thinks I get bigger and bigger over night.  But I guess when he doesn't see me for five or six days I can see where he is coming from.  


Less than three months to go!

Roasted Asparagus!!

Spring is here however, we had snow today in MI.  I love vegetables and I roast vegetables a lot for sides dishes in spring and summer.  One of my favorites is Roasted Asparagus.



Super easy recipe that you can use with any variety of vegetables such as zucchini or potato's.  


Preheat oven for 350 degrees

Drizzle olive oil over clean asparagus.

Sprinkle desired amount of salt, pepper and garlic powered (minced garlic is equally as delicious)  and bake for 10 min.

The Asparagus will have the perfect amount of  crisp and tenderness to it.

Happy Valentine's Day!!!!

I hope everyone is having a wonderful Valentine's Days!!!  Below are a few pics of me and Papie over the years! We have been together for about a decade now and I am falling deeper in love with him everyday especially when he does the laundry! We have big plans for celebrating this special day!  I am currently at work.  Papie is at home eating  taco's that I made him before heading to work today.  I will post the recipe soon.  So if that doesn't sound like the best Valentine's day then I don't know what is.

Back in Action!

Shortly after starting my blog Papie and I found out that were expecting.  My first trimester put me out of blogging commission.  The thought or smell of food had me running for the bathroom.  But, I am feeling much better and I ready to blog my heart out.  I am five months prego and will be finding out if were on  "team pink or blue" this Thursday.  So stay tuned for the exciting news.
