Homemade Tortilla Chips!

I always love the free Tortilla Chips and Salsa when Papie and I go to the Mexican Restaurant!  But since having Baby C we haven't been out to eat much.  So this fun and easy recipe is a home run in my eyes!  Its so simple that you can have it anytime of day.  Its also a crowd pleaser.  In fact, I'm making them for the family Christmas party this week.

Ingredients:
Corn Tortilla  cut in to triangles
Vegetable oil
Season Salt

Depending on how many chips you want to make choose an appropriate size pan (the more chips the larger the pan should be). Fill the bottom of the pan with oil about half inch so the tortillas will be submerged in the oil.  Set the stove to med high heat.  Add the Tortilla triangles when the oil is hot.




Occasionally turn the tortillas. Let fry until evenly golden brown on both sides.



Place cooked chips on a paper towel to absorb the extra grease.   While Chips are still hot add a sprinkle of season salt.




Chips will stay fresh and crunchy for a few days so you can store them in a zip lock bag after they have completely cooled off.  




Enjoy  with Salsa or Guacamole

Banana Bread Remix!

My life has been changed by that easy cake mix banana bread (see recipe here).  I wanted to do a remix of it and use Red Velvet cake mix.  It was equally as good as the Yellow cake mix however Papie preferred the yellow cake mix banana bread over the Red Velvet.  You all can be the judge and let me know what you think after you try the recipes out.



Ingredients:

1 Box Red Velvet Cake Mix
3 Eggs
1/3 Cup oil
4 Mashed Bananas
2 Cups Milk Chocolate chips

Preheat Oven to 350 Degrees F

Mashed bananas and add remaining ingredients in to bowl and mix together.  Pour batter into two well greased loaf pans.  Bake for 30-35 minutes at 350 Degrees F


*Helpful Tip:  When your bananas are starting to get over ripe just pop them in the freezer with there peel on and take them out whenever you want to make banana bread.  Just let them thaw out for about 15-20 min  and there ready to go after you peel them.  They are a little watery but that's okay cause you mash them up anyways.

Quiche For Breakfast, Lunch or Dinner at my house!



Oh how I love Quiche anytime of the day.  Its a meal all on its own and its very filling.  Left over eggs never taste good after they are heated up, they are always rubbery and dried out!  However, for some reason quiche leftovers still taste good.  This basic components of this recipe are so easy and are always staple ingredients for me. I can change any of the ingredients out and have a different style Quiche. 

Ingredients:

1 Deep dish frozen pie crust
1 cup milk
1 cup cheddar cheese (Add extra cheese if you want, you can never go wrong with to much cheese)
2 table spoons flour
salt to taste
pepper to taste
1 box frozen chopped spinach thawed and rung out 

*Helpful tip from Rachel Ray: thaw the spinach and place in a dish towel and ring out*

Bake pie crust according to package instructions.
Mix all your ingredients together and pour in cooked pie crust.  Cover corners of crust with foil so they don't get burnt.   Bake for 1 hour at 350 degree's F

If you want to take this up a notch add cooked bacon  or ham!!  I always make a big breakfast on Sunday mornings so usually I cook extra of whatever were having such as bacon, sausage, fried potato's and whatever is left over I throw in a quiche to eat for breakfast for the week.

Cake mix Banana Bread!! So easy!

Well I was looking for a new banana bread recipe online one night because I didn't have flour and wanted to find a recipe that used Bisquick cause that's all I had on hand.  But on  Bettycrocker.com I found a recipe that uses cake mix.  How can you go wrong!

Ingredients:

1 Box Yellow cake mix
3 Eggs
1/3 Cup oil
4 Mashed Bananas
2 Cups Milk Chocolate chips

Preheat Oven to 350 Degrees F

Mashed bananas and add remaining ingredients in to bowl and mix together.  Pour batter into two well greased loaf pans.  Bake for 30-35 minutes at 350 Degrees F






Unfortunately I was unable to take a pictures of the whole loaf because, we started eating it before I was able to get it out of the pan.  It was very delicious and moist!  I could still taste the flavor of the yellow cake mix in fact, it was more cake like than regular banana bread.  But Papie and his coworkers really enjoyed it.  Actually Papie preferred this over my regular banana bread.
